Last night we were looking for something to do with our leftover baked (GF) chicken from the previous evening, and we were in the mood for a salad. I also had some blue cheese on hand, so decided to make my easy blue cheese dressing, which led to this Buffalo Chicken Salad…
- chopped greens (we used romaine and iceberg lettuce)
- sliced fresh tomato
- chopped cooked chicken tossed in a sauce made from 2Tb melted butter and 1/4C GF hotsauce
- homemade blue cheese dressing
- chopped celery
That’s it, super easy and delicious, as well as low carb!

Sounds delicious and looks fab. How do you find going G/F and W/F. Is there anything you miss?

Glad you think it looks yummy! When it comes to food, there isn’t anything I miss because there are such great wheat-free alternatives that don’t make me feel awful. However, what I DO miss is the convenience and social outlet of being able to go a restaurant and just order off the menu without having to ask a hundred questions or have only a couple choices (like salads or bunless burgers.) Because it’s so limited, we just don’t go out very often anymore (food is SO much better at home), and I do miss that. I think as more people become aware of how damaging grains can be and stop eating them, the demand will shift and there will be more choices!
